  • 1 block (14 oz) extra-firm tofu, pressed and cubed
  • 3 tablespoons cornstarch (for coating the tofu)
  • 2 cups fresh pineapple chunks (or frozen, thawed)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • 2 tablespoons neutral oil for cooking
  • Green onions and sesame seeds for garnish

Instructions

  1. Press tofu between clean towels for 15 minutes to remove excess moisture.
  2. Cut pressed tofu into 1-inch cubes and coat with cornstarch.
  3. Heat oil in a skillet over medium-high heat and sauté tofu until golden brown on all sides.
  4. Remove tofu and sauté sliced bell peppers and onion in the same pan until caramelized.
  5. Add minced garlic and ginger; stir for 30 seconds until fragrant.
  6. Toss in pineapple chunks and let caramelize for 2-3 minutes.
  7. Combine soy sauce, rice vinegar, and maple syrup in a bowl; pour over the skillet mixture.
  8. Return crispy tofu to the skillet, mix well, then serve.
