  • 28 oz can fire-roasted crushed tomatoes
  • 15 oz can red kidney beans (drained and rinsed)
  • 15 oz can pinto beans (rinsed and drained)
  • 1 medium yellow onion, chopped
  • 3 tablespoons tomato paste
  • 1 ½ teaspoons garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder (optional)
  • 1 tablespoon brown sugar
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Sauté chopped onion for about 2 minutes until softened.
  2. Add ground beef and cook until browned, breaking it into smaller pieces (about 5 minutes). Drain excess fat.
  3. Stir in minced garlic, tomato paste, cumin, chili powder, brown sugar, oregano, salt, and pepper. Mix well for about 30 seconds.
  4. Pour in beef broth and add crushed tomatoes along with both types of beans. Bring to a boil then reduce heat to simmer.
  5. Let the chili simmer gently for 1–2 hours while stirring occasionally until thickened to your liking.
