  • 3 ancho peppers
  • 3 pasilla peppers
  • 2.5 pounds beef chuck (cut into bite-sized cubes)
  • 2 tablespoons olive oil
  • 1 medium white onion (chopped)
  • 3 jalapeno peppers (chopped)
  • 2 cups beef stock
  • 2 tablespoons masa harina (corn flour)

Instructions

  1. Toast dried peppers in a dry pan for 1-2 minutes per side until fragrant.
  2. Soak toasted peppers in hot water for 20 minutes until softened.
  3. Blend soaked peppers with a little soaking water until smooth to create chili paste.
  4. Season beef cubes with cumin, salt, and pepper.
  5. Sear beef in a pot with olive oil until browned on all sides.
  6. Remove beef; sauté onions and jalapeños in the same pot.
  7. Add garlic and cook for another minute.
  8. Return beef to pot; mix in chili paste and cook for a few minutes.
  9. Stir in beef stock and masa harina; bring to boil then reduce heat.
  10. Cover and simmer for 2 hours or until beef is tender.
