  • 1 lb chicken breast or shrimp
  • 2 tablespoons olive oil
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 1 ½ cups heavy cream
  • ½ cup grated Parmesan cheese
  • Cajun seasoning, smoked paprika, red pepper flakes to taste

Instructions

  1. Cook penne pasta in salted water until al dente; reserve ½ cup pasta water before draining.
  2. Season chicken or shrimp with salt and Cajun seasoning. Sear in olive oil until golden and cooked through; set aside.
  3. In the same skillet, sauté bell peppers and garlic in remaining oil for about 4 minutes.
  4. Stir in Cajun seasoning, smoked paprika, and red pepper flakes; cook for 30 seconds.
  5. Add heavy cream, simmer while stirring in Parmesan until combined.
  6. Return pasta and protein to the skillet; mix well, adding reserved pasta water as needed for consistency.
  7. Garnish with fresh herbs and lime juice before serving.
