  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 1 ½ cups heavy cream
  • ½ cup grated Parmesan cheese
  • 2 teaspoons Cajun seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon red pepper flakes (adjust to taste)
  • ¼ tsp cayenne pepper
  • Salt and black pepper, to taste
  • Chopped fresh parsley or cilantro (for garnish)
  • Juice of ½ lime (for garnish)

Instructions

  1. Cook penne pasta in salted boiling water until al dente; reserve ½ cup pasta water.
  2. Season chicken with salt, pepper, and Cajun seasoning; cook in olive oil until done. Set aside.
  3. In the same skillet, sauté bell peppers and garlic until soft.
  4. Stir in Cajun seasoning and spices; add heavy cream and Parmesan cheese, simmering until creamy.
  5. Combine cooked pasta and chicken into sauce; adjust consistency with reserved pasta water if needed.
  6. Garnish with fresh herbs and lime juice before serving.
