  • 2 tablespoons sriracha
  • 1 tablespoon soy sauce
  • 1 tablespoon apple cider vinegar

  • 1 teaspoon minced ginger
  • 1 tablespoon olive oil
  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1 cup water

Instructions

  1. Rinse jasmine rice under cold water until clear. Combine with coconut milk, water, and salt in a saucepan. Bring to boil, then cover and simmer for 15 minutes. Let sit off heat for another 5 minutes.
  2. In a skillet, heat olive oil over medium heat. Season chicken with salt and pepper; cook until golden brown (6–8 minutes).
  3. In a bowl, whisk together maple syrup, sriracha, soy sauce, apple cider vinegar, garlic, and ginger. Pour the sauce into the skillet once the chicken is cooked through.
