  • 2 ripe mangoes (peeled and diced)
  • 2 cucumbers (thinly sliced)
  • 1/2 red onion (thinly sliced)
  • 1/4 cup fresh cilantro (roughly chopped)
  • 3 tbsp lime juice (freshly squeezed)
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp ginger (freshly grated)
  • 1 clove garlic (minced)
  • 1 tsp honey
  • 1/2 tsp red pepper flakes (or to taste)
  • 1/4 tsp salt
  • 1 red chili (finely chopped, optional)

Instructions

  1. Prepare the ingredients by peeling and dicing mangoes, slicing cucumbers and red onion, and chopping cilantro. If desired, finely chop the chili.
  2. In a small bowl, whisk together lime juice, rice vinegar, sesame oil, grated ginger, minced garlic, honey, red pepper flakes, and salt.
  3. In a large bowl, combine mangoes, cucumbers, red onion, cilantro, and optional chili. Drizzle dressing over the top and gently mix until well coated.
  4. Chill in the refrigerator for about 10 minutes before serving for optimal flavor.
