- 2 ripe mangoes (peeled and diced)
- 2 cucumbers (thinly sliced)
- 1/2 red onion (thinly sliced)
- 1/4 cup fresh cilantro (roughly chopped)
- 3 tbsp lime juice (freshly squeezed)
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp ginger (freshly grated)
- 1 clove garlic (minced)
- 1 tsp honey
- 1/2 tsp red pepper flakes (or to taste)
- 1/4 tsp salt
- 1 red chili (finely chopped, optional)
- Prepare the ingredients by peeling and dicing mangoes, slicing cucumbers and red onion, and chopping cilantro. If desired, finely chop the chili.
- In a small bowl, whisk together lime juice, rice vinegar, sesame oil, grated ginger, minced garlic, honey, red pepper flakes, and salt.
- In a large bowl, combine mangoes, cucumbers, red onion, cilantro, and optional chili. Drizzle dressing over the top and gently mix until well coated.
- Chill in the refrigerator for about 10 minutes before serving for optimal flavor.
