  • 2 cans Chickpeas (drained and rinsed)
  • 1/2 cup Red Onion (finely diced)
  • 1 cup Celery (finely diced)
  • 1/2 cup Red Bell Pepper (finely diced)
  • 1/4 cup Fresh Cilantro (chopped)
  • 1/4 cup Vegan Mayonnaise
  • 2 tbsp Chipotle Peppers in Adobo Sauce (minced; adjust to taste)
  • 1 tbsp Lime Juice (freshly squeezed)
  • 1 tsp Smoked Paprika
  • Salt and Black Pepper to taste

Instructions

  1. Drain and rinse the chickpeas thoroughly to remove excess sodium. Place them in a large mixing bowl.
  2. Finely dice the red onion, celery, and red bell pepper. Add them to the bowl with chickpeas.
  3. In a separate bowl, mix vegan mayonnaise, minced chipotle peppers, lime juice, smoked paprika, garlic powder, salt, and black pepper until smooth.
  4. Pour the dressing over the chickpeas and vegetables. Gently fold everything together until well combined.
  5. Chill in the refrigerator for at least 10 minutes before serving to allow flavors to meld.
