  • 1 cup Diced Onion
  • 1 cup Diced Celery
  • 1 cup Diced Green Bell Pepper

  • 1 lb Yukon Gold Potatoes (peeled and cubed)
  • 4 cups Chicken Broth
  • 1 tsp Cajun Seasoning (adjust to taste)
  • 1/2 tsp Smoked Paprika
  • 1/4 tsp Cayenne Pepper (optional, for extra heat)
  • 1/2 cup Heavy Cream
  • 2 tbsp Butter
  • 1 cup Cooked Andouille Sausage (sliced)
  • Chopped Green Onions

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion, celery, and bell pepper until soft, about 5-7 minutes.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in cubed potatoes, chicken broth, Cajun seasoning, smoked paprika, and cayenne pepper if using. Bring to a boil, then reduce heat and simmer for 20-25 minutes until potatoes are tender.
  4. Blend the soup using an immersion blender until smooth or carefully blend in batches.
  5. Stir in heavy cream and butter; heat through without boiling.
  6. Add sliced sausage and cook for an additional 5 minutes until heated through.
  7. Taste and adjust seasonings as desired. Serve warm garnished with green onions.
