  • 1 lb large shrimp (peeled and deveined)
  • 5 oz mixed greens
  • 1/2 cup red onion (thinly sliced)
  • 1/2 cup cherry tomatoes (halved)
  • 1/4 cup cilantro (chopped)
  • 1/4 cup mint (chopped)
  • 2 tbsp lime juice (freshly squeezed)
  • 2 tbsp soy sauce (low sodium)
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 cloves garlic (minced)
  • 1 tsp ginger (grated)
  • 1/2 tsp red pepper flakes (or more, to taste)
  • 1 tbsp honey
  • 1 tbsp chili garlic sauce (or more, to taste)
  • 1 tbsp water

Instructions

  1. Marinate shrimp with soy sauce, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes for at least 15 minutes.
  2. Preheat the air fryer to 400°F (200°C).
  3. Cook shrimp in the air fryer for 8-12 minutes until pink and opaque.
  4. Whisk together lime juice, soy sauce (or substitute), honey, chili garlic sauce, and water for the dressing.
  5. In a bowl, mix greens, red onion, cherry tomatoes, cilantro, and mint.
  6. Combine cooked shrimp with the salad base and drizzle with dressing before serving immediately.
