  • 3 tbsp grapeseed oil
  • 6 tbsp unsalted butter
  • 3 tbsp all-purpose seasoning
  • 1½ tbsp black pepper
  • 2 tbsp smoked paprika
  • 4 thyme sprigs
  • 5 garlic cloves (smashed)
  • 1 onion (sliced into ½" medallions)

Instructions

  1. Clean and pat dry the whole chicken. Remove the backbone carefully using kitchen shears.
  2. Flatten the chicken by pressing down firmly on both sides.
  3. Drizzle grapeseed oil and sprinkle all-purpose seasoning inside, then massage to distribute evenly.
  4. Place butter under the skin for added moisture and flavor.
  5. Scatter thyme leaves over the chicken and lay sliced onions in a cast iron skillet.
  6. Position the chicken breast-side up on top of the onions.
  7. Roast in a preheated oven at 375°F (190°C) for about 75 minutes, basting every 15 minutes until golden brown.
  8. Let rest for a few minutes before serving.
