  • 4 large organic sweet potatoes, peeled + cubed
  • 23 Tbsps extra virgin olive oil
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup almond milk (or your favorite plant-based milk)
  • 2 tsps vanilla extract
  • 4 Tbsps unsalted butter, cubed into small pieces
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • Pinch of ground allspice
  • 1 cup organic raisins, soaked + drained
  • 2 cups vegan marshmallows
  • 1 1/2 cups raw pecans
  • 1/4 cup pure maple syrup

Instructions

  1. Preheat the oven to 400°F (200°C). Peel and cube the sweet potatoes, then toss them with olive oil, cinnamon, and nutmeg until well-coated.
  2. Spread the seasoned sweet potatoes on a baking sheet and roast for about 30 minutes or until tender.
  3. In a large bowl, mash the roasted sweet potatoes with almond milk, vanilla extract, butter, brown sugar, and maple syrup until smooth.
  4. In a greased baking dish, layer half of the sweet potato mixture followed by half of the raisins, vegan marshmallows, and pecans. Repeat layers.
  5. Drizzle additional maple syrup over the top and bake at 350°F (175°C) for another 30-40 minutes until bubbly.
