  • 1/2 cup light brown sugar
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 3/4 cup semi-sweet chocolate chips (for topping)
  • 1 1/2 cups sweetened shredded coconut
  • 10 ounces sweetened condensed milk
  • 4 to 5 ounces salted caramel sauce
  • 3/4 cup semi-sweet chocolate chips (melted for drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a microwave-safe bowl, melt the butter; let it cool slightly before adding the egg. Mix in brown sugar and vanilla until smooth. Gently stir in flour and salt.
  3. Pour the mixture into a pie dish and bake for 10-12 minutes until slightly firm around the edges.
  4. Remove from oven, sprinkle with chocolate chips, then layer coconut, sweetened condensed milk, and caramel sauce on top.
  5. Bake for an additional 25 minutes until bubbling at the edges.
  6. Allow to cool on a wire rack while you melt extra chocolate for drizzling.
  7. Once cooled, drizzle melted chocolate over the pie and let it set at room temperature for at least four hours or overnight before slicing.
