  • 9 Roma tomatoes, sliced lengthwise
  • 3 tbsp extra virgin olive oil
  • 2 tbsp unsalted butter
  • 1 yellow onion, diced
  • 4 garlic cloves, minced
  • 1 tbsp fresh thyme, minced
  • 1 tsp Kosher salt
  • ½ tsp ground black pepper
  • 1 can (28 oz) San Marzano tomatoes, crushed
  • 1 cup fresh basil, roughly chopped
  • 1 tbsp sugar
  • 2 cups chicken stock
  • â…” cup heavy cream

Instructions

  1. Preheat oven to 375°F. Spread Roma tomato halves on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Roast for one hour.
  2. In a large pot over medium-high heat, melt butter (or additional olive oil). Sauté diced onion until soft and translucent (about 5 minutes). Add garlic, thyme, salt, and pepper; sauté until fragrant.
  3. Stir in crushed San Marzano tomatoes, fresh basil, and sugar; let simmer for about 10 minutes.
  4. Add roasted tomatoes and chicken stock; simmer for an additional 30 minutes.
  5. Purée the soup using an immersion blender until smooth.
  6. Stir in heavy cream until combined.
  7. Serve warm with optional croutons.
