  • 500 g pumpkin (diced)
  • 2 garlic bulbs
  • 2 sprigs rosemary
  • 3 tbsp olive oil
  • 1/2 cup white grape juice
  • 3 cups chicken or vegetable stock
  • 2 cups small pasta
  • 50 g grated parmesan
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 200°C (390°F). Cut tops off garlic bulbs.
  2. In an ovenproof dish, combine diced pumpkin, garlic bulbs, rosemary, olive oil, salt, and pepper. Roast for about 45 minutes until soft.
  3. Let garlic cool before squeezing out cloves; remove rosemary leaves.
  4. In a pot, combine roasted ingredients with chicken or vegetable stock, white grape juice, and pasta. Bring to a boil then simmer for 15 minutes until pasta is tender.
  5. Stir in grated parmesan until melted and serve immediately.
