  • 2 lbs. red potatoes, cut into 1 ½ inch pieces
  • 1 head roasted garlic (1215 cloves)
  • ¼ cup salted butter
  • ½ cup vegetable or chicken broth
  • ⅓½ cup heavy cream
  • 1 teaspoon fresh thyme
  • 1 ½ teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon chopped parsley

Instructions

  1. Spray the inside of a three-quart slow cooker with cooking spray.
  2. Add the red potato pieces, roasted garlic cloves, butter, salt, pepper, and broth to the slow cooker. Cover and cook on high for 4-5 hours or low for 7-8 hours until tender.
  3. Once cooked, add heavy cream to achieve desired creaminess. Mash using a hand mixer or potato masher.
  4. Taste and season with additional salt and pepper if necessary. Garnish with chopped parsley before serving.
