  • 3 lbs Beef Bones (neck bones, marrow bones, or short ribs)
  • 2 tbsp Olive Oil
  • 2 medium Yellow Onions (roughly chopped)
  • 2 large Carrots (roughly chopped)
  • 2 stalks Celery (roughly chopped)
  • 6 cloves Garlic (smashed)
  • 8 cups Beef Broth (low sodium)
  • 2 cups Water
  • 1/2 cup Dry Apple Vinegar
  • 2 tbsp Tomato Paste
  • 2 sprigs Fresh Thyme
  • 2 leaves Bay Leaf
  • 1 tsp Black Peppercorns (whole)
  • 1 tsp Salt (or to taste)
  • 1/2 tsp Black Pepper (or to taste)

Instructions

  1. Preheat your oven to 400°F (200°C). Roast the beef bones on a baking sheet for about 30 minutes until deeply browned.
  2. In a large pot, heat olive oil over medium heat. Sauté onions, carrots, celery, and garlic until tender and fragrant (about 10 minutes).
  3. Add the roasted beef bones to the pot along with any collected juices.
  4. Pour in the beef broth and water, then add dry apple vinegar, tomato paste, thyme sprigs, bay leaves, black peppercorns, salt, and black pepper. Stir well.
  5. Bring the mixture to a gentle boil before reducing heat to low. Cover partially and simmer for about 3 hours.
  6. Strain through a fine-mesh sieve or cheesecloth to remove solids. Taste and adjust seasoning if needed before serving.
