  • 1 cup milk
  • 1/2 cup cold butter, cubed (1 stick)
  • 1 cup light brown sugar
  • 1 cup flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat the oven to 350°F and grease a 9 x 13 inch baking dish.
  2. In a bowl, whisk together flour, baking powder, salt, and spices.
  3. In an electric mixer, combine butter and pumpkin puree until smooth. Add sugar and mix well. Incorporate eggs and vanilla.
  4. Gradually add dry ingredients alternately with milk to the mixture until just combined.
  5. For the crumb topping, mix cold butter, brown sugar, flour, cinnamon, and nutmeg until crumbly.
  6. Layer half of the batter in the prepared dish, sprinkle with half of the crumb topping, add the remaining batter, then top with crumbs.
