  • 1/2 cup packed brown sugar
  • 1 tablespoon baking powder
  • 2 teaspoons ground cinnamon
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon fine sea salt
  • 1/2 cup cold salted butter, diced or grated
  • 3/4 cup pumpkin purée
  • 1/3 cup buttermilk or milk
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar
  • 2 to 3 teaspoons buttermilk or milk
  • 1/2 teaspoon vanilla extract
  • optional: 1/4 teaspoon ground cinnamon, ginger or cardamom

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, brown sugar, baking powder, cinnamon, pumpkin pie spice, and salt until combined.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in pumpkin purée, buttermilk, and vanilla until just combined.
  5. Turn the dough onto a floured surface; fold gently until it holds together. Pat into an 8-inch circle and cut into wedges.
  6. Place on the baking sheet and chill in the freezer for about 15 minutes.
  7. Brush tops with buttermilk and bake for 13-15 minutes until golden.
