  • 1/3 cup Granulated Sugar (plus extra for topping)
  • 4 large Egg Yolks
  • 1 tsp Vanilla Extract
  • 1 cup Pumpkin Puree
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Ginger
  • 1/4 tsp Salt

Instructions

  1. Preheat your oven to 325°F (160°C). If using mini pumpkins, cut off the tops and scoop out seeds; if using ramekins, place them in a water-filled baking dish.
  2. In a bowl, whisk together egg yolks and granulated sugar until smooth.
  3. In a saucepan over medium heat, combine heavy cream, pumpkin puree, cinnamon, ginger, salt, and vanilla extract. Stir until just simmering.
  4. Gradually add the cream mixture to the egg mixture while whisking continuously. Pour into prepared pumpkins or ramekins.
  5. Bake for about 30 minutes until set but slightly jiggly in the center. Cool at room temperature before chilling in the fridge for at least 2 hours.
