  • 1 lb. ground beef
  • 2 teaspoons dried oregano, divided
  • 2 teaspoons dried thyme, divided
  • 6 tablespoons butter
  • 1 cup yellow onion, diced
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 5 cloves garlic, minced
  • 4 tablespoons flour
  • 8 cups chicken broth
  • 8 oz. uncooked elbow macaroni
  • 1 cup heavy cream
  • 8 oz. sharp cheddar cheese, shredded
  • 1 teaspoon white balsamic vinegar
  • Kosher salt to taste
  • fresh cracked pepper to taste
  • 4 sesame seed buns, diced into 1-inch pieces
  • 2 tablespoons olive oil
  • sliced green onion, for garnish
  • shredded cheddar cheese, for garnish

Instructions

  1. Preheat oven to 400°F. Toss diced sesame seed bun cubes with olive oil and bake for 10 minutes until crispy.
  2. In a large pot over medium heat, brown ground beef seasoned with oregano, thyme, salt, and pepper; set aside.
  3. In the same pot, sauté diced onions, carrots, celery with butter until tender.
  4. Add minced garlic and remaining herbs; sauté for another minute.
  5. Stir in flour and cook for 1 minute to thicken.
  6. Deglaze the pot with chicken broth then add remaining broth and uncooked macaroni; season again.
  7. Simmer until pasta is al dente (about 5-7 minutes), stirring occasionally.
  8. Remove from heat and mix in heavy cream and cheddar cheese until melted.
  9. Stir in white balsamic vinegar and return cooked beef to the pot; gently reheat before serving.
  10. Serve topped with croutons, sliced green onions, and extra cheddar cheese.
