  • 1/4 tsp Garlic Powder

  • 5 oz Mixed Greens
  • 1 Avocado (diced)
  • 1/2 cup Feta Cheese (crumbled)
  • 1/4 cup Red Onion (thinly sliced)
  • 1/2 cup Cherry Tomatoes (halved)
  • 3 tbsp Olive Oil (extra virgin)
  • 2 tbsp Lemon Juice (freshly squeezed)
  • 1 tsp Dijon Mustard
  • 1/4 tsp Dried Oregano
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  1. In a bowl, combine drained chickpeas with olive oil, paprika, garlic powder, and salt. Toss to coat.
  2. In a large salad bowl, layer mixed greens as the base and add diced avocado.
  3. Top with crumbled feta cheese, sliced red onion, halved cherry tomatoes, and kalamata olives.
  4. In a separate bowl, whisk together extra virgin olive oil, lemon juice, Dijon mustard, oregano, salt, and black pepper to create the dressing.
