  • 2 tbsp olive oil
  • 1 onion (finely chopped)
  • 3 cloves of garlic (finely chopped)
  • 4 ripe tomatoes (chopped)
  • 1 tsp ground cumin
  • 1 tsp paprika powder
  • ½ tsp smoked paprika powder (optional)
  • â…“ tsp turmeric
  • 1 tbsp tomato paste
  • dash of salt & black pepper
  • 1 can (15oz) canned white beans (Cannellini, Navy, Great Northern)
  • ¾ cup dry white beans (Cannellini, Navy, Great Northern)
  • 1 cup veggie broth
  • 1 ½2 cups veggie broth

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté finely chopped onion until translucent (about 3-5 minutes).
  2. Add garlic, ground cumin, paprika powder, and turmeric; stir for 1 minute until fragrant.
  3. Incorporate chopped tomatoes and tomato paste; simmer for 5 minutes.
  4. Add canned and dry white beans along with veggie broth; stir well.
  5. Bring to a gentle boil, reduce heat to low, cover, and simmer for 20 minutes (or 10 minutes on high pressure in the Instant Pot).
  6. Adjust seasoning if needed, then serve hot with crusty bread or over rice.
