  • 4 boneless skinless chicken breasts
  • Salt and pepper (for seasoning)
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • Juice and zest of 1 lemon
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach leaves

Instructions

  1. Prep the Chicken: Pound chicken breasts to an even thickness and season generously with salt and pepper.
  2. Cook the Chicken: In a large sauté pan over medium-high heat, heat olive oil. Add chicken and cook for about 3-4 minutes per side until golden brown. Remove from pan and set aside.
  3. Make the Sauce: In the same pan, sauté garlic until fragrant. Add chicken broth, lemon juice, and zest; bring to a boil then reduce heat. Stir in heavy cream and simmer until thickened. Mix in Parmesan cheese until melted.
  4. Add Spinach: Toss in fresh spinach; cook until wilted. Return chicken to the pan, spoon sauce over it, sprinkle with additional Parmesan, cover for two minutes.
  5. Serve: Plate up with garnishes of thinly sliced lemon and extra Parmesan cheese.
