4 boneless skinless chicken breasts
Salt and pepper (for seasoning)
2 tablespoons olive oil
3 cloves garlic (minced)
1 cup chicken broth
¾ cup heavy cream
Juice and zest of 1 lemon
½ cup grated Parmesan cheese
4 cups fresh spinach leaves
Instructions
Prep the Chicken: Pound chicken breasts to an even thickness and season generously with salt and pepper.
Cook the Chicken: In a large sauté pan over medium-high heat, heat olive oil. Add chicken and cook for about 3-4 minutes per side until golden brown. Remove from pan and set aside.
Make the Sauce: In the same pan, sauté garlic until fragrant. Add chicken broth, lemon juice, and zest; bring to a boil then reduce heat. Stir in heavy cream and simmer until thickened. Mix in Parmesan cheese until melted.
Add Spinach: Toss in fresh spinach; cook until wilted. Return chicken to the pan, spoon sauce over it, sprinkle with additional Parmesan, cover for two minutes.
