  • 2 tablespoons olive oil
  • 1 ¼ lbs boneless skinless chicken breast
  • 6 cups chicken broth
  • ¾ cup carrots, diced
  • 2 sticks celery, diced
  • 4 cloves garlic, minced
  • 2 cups fresh spinach
  • ¾ cup uncooked orzo pasta
  • Juice of 1 lemon (34 Tbsp)
  • ½ cup heavy cream

Instructions

  1. Heat olive oil in a pot over medium-high heat. Sear seasoned chicken for 3-4 minutes per side until golden brown; set aside.
  2. In the same pot, deglaze with white grape juice, reducing it by half. Add butter, onions, carrots, and celery; sauté until softened. Stir in minced garlic.
  3. Add seasonings and chicken broth; bring to a boil then reduce to simmer. Return chicken to the pot and cook until done.
  4. Cook orzo separately according to package instructions; drain.
  5. Lower heat and stir in heavy cream and parmesan cheese until smooth. Fold in spinach and lemon juice.
  6. Serve warm over orzo.
