2 cups graham cracker crumbs
½ cup unsalted butter, melted
2 tablespoons granulated sugar
24 oz cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
1 cup sour cream
3 medium apples, peeled and diced
⅓ cup brown sugar
1 teaspoon cinnamon
2 tablespoons cornstarch
2 tablespoons water
1 tablespoon lemon juice
¾ cup all-purpose flour
½ cup brown sugar
½ teaspoon cinnamon
½ cup cold unsalted butter, cubed
Instructions
Prepare the crust by mixing graham cracker crumbs, melted butter, and sugar in a bowl. Press firmly into the bottom of a springform pan.
In another bowl, beat cream cheese until smooth. Gradually add granulated sugar and vanilla extract. Mix in eggs one at a time; then fold in sour cream gently.
Toss diced apples with brown sugar, cinnamon, cornstarch, water, and lemon juice in a separate bowl.
Layer half of the cream cheese filling over the crust, followed by spiced apples and the remaining filling. Bake until set but slightly wobbly.
For the crumble topping, combine flour, brown sugar, cinnamon, and cold cubed butter until crumbly. Sprinkle over cheesecake during the last few minutes of baking.
