  • 8 chicken thighs (or preferred cuts)
  • ½ head cabbage, roughly chopped
  • 4 potatoes, peeled and sliced into ¼-inch rounds
  • 1 medium onion, sliced
  • ½ cup chicken stock
  • 1 ½ teaspoons thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix thyme, paprika, salt, onion powder, garlic powder, and black pepper in a bowl.
  3. Coat chicken thighs with the dry rub and let them sit.
  4. In an oven-safe pan, cook bacon until crispy; set aside and reserve fat.
  5. Sear chicken thighs in the same pan until browned on both sides; set aside.
  6. Sauté cabbage in remaining bacon fat until slightly wilted.
  7. Add potatoes and onions; stir in chicken stock and mix well.
  8. Add chopped bacon back into the mixture.
  9. Arrange chicken on top of the vegetables and bake for 45–50 minutes until cooked through.
