  • 8 chicken thighs
  • ½ head cabbage, chopped
  • 4 medium potatoes, sliced
  • 1 medium onion, sliced
  • ½ cup chicken stock
  • 1 ½ teaspoons thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix thyme, smoked paprika, garlic powder, onion powder, salt, and pepper. Rub the mixture onto the chicken thighs.
  3. In a large oven-safe pan, sear the chicken thighs until browned on both sides. Remove from the pan.
  4. Sauté the chopped cabbage in residual fat for 2–3 minutes until slightly wilted.
  5. Add sliced potatoes and onions along with chicken stock; stir to combine.
  6. Return chicken to the pan on top of the veggies; bake for 45–50 minutes or until chicken reaches 165°F (75°C).
