  • 2 large eggs
  • 1/2 cup canola oil
  • 1/2 cup unsalted butter (room temperature)
  • 2 1/4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream
  • 1 jar vegan marshmallow creme

Instructions

  1. Preheat the oven to 350°F (175°C) and line two cookie sheets with parchment paper.
  2. In a large bowl, mix together the cake mix, eggs, and oil until a soft dough forms. Drop dollops onto the prepared baking sheets about 2 inches apart.
  3. Bake for 8-10 minutes until edges are set. Allow cooling on the baking sheet for 5 minutes before transferring to a wire rack.
  4. For the frosting: Beat room-temperature butter until creamy; gradually add powdered sugar, vanilla extract, and salt. Fold in vegan marshmallow creme until smooth.
  5. For the ganache: Microwave heavy cream over chocolate chips for about 45 seconds; whisk until smooth and let cool slightly.
  6. Frost cooled cookies with marshmallow frosting, then drizzle with ganache. Pipe extra frosting into squiggles on top.
