  • 20g butter (or olive oil)
  • 1 tbsp minced garlic
  • 100g chopped white onion
  • 225g assorted bell peppers (red, green, yellow)
  • 140g light cream cheese
  • 50g shredded mozzarella
  • 240g dry macaroni (whole wheat or chickpea pasta)
  • Fresh parsley for garnish

  1. Cook the macaroni in salted water until al dente, reserving 125ml of pasta water before draining.
  2. In a large skillet, melt butter over medium heat. Sauté garlic, onion, and bell peppers for about 4-5 minutes until softened.
  3. Add ground beef (or chickpeas), cook for 5-7 minutes while breaking apart. Drain excess fat and season with salt, pepper, paprika, and chili flakes.
  4. Lower the heat and stir in cream cheese, mozzarella, and cheese slices until melted and creamy.
  5. Add cooked pasta along with reserved pasta water. Stir to combine until noodles are coated in sauce.
