  • 1 medium yellow onion; diced
  • 4 tsp. garlic; minced
  • 1 lb. ground turkey
  • 1 Tbsp. brown sugar
  • 2 Tbsp. chili powder
  • 1 Tbsp. ground cumin
  • 1 tsp. dried oregano
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 cup tomato paste
  • 4 cups beef broth (or use vegetable broth for a lighter option)
  • 28 ounce can fire roasted crushed tomatoes
  • 15 ounce can kidney beans; rinsed and drained
  • 15 ounce can black beans; rinsed and drained
  • 15 ounce can pinto beans; rinsed and drained

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Sauté diced onion and minced garlic for 3-4 minutes until softened.
  2. Add ground turkey to the pot and cook until browned, about 5-7 minutes.
  3. Stir in brown sugar, chili powder, cumin, oregano, salt, pepper, and tomato paste until well combined.
  4. Pour in beef broth (or vegetable broth), crushed tomatoes, and rinsed beans. Mix thoroughly.
  5. Bring to a boil then reduce heat to low. Simmer uncovered for 30 minutes, stirring occasionally.
