  • 3 bell peppers, halved and seeded
  • 1 tablespoon extra virgin olive oil
  • 1 pound ground chicken breast
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon Italian seasoning
  • 1 small red onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • ½ cup cherry tomatoes, quartered
  • ½ cup kalamata olives, chopped
  • ½ cup feta cheese (divided)
  • 2 tablespoons fresh dill, chopped
  • ½ cup water
  • lemon wedges, for serving

Instructions

  1. Preheat the oven to 350°F. Cook the rice according to package instructions.
  2. Prepare the bell peppers by slicing them horizontally and discarding seeds. Arrange in a baking dish cut side up.
  3. In a skillet over medium heat, heat olive oil and cook ground chicken with salt and pepper until no longer pink.
  4. Add Italian seasoning, onion, garlic, and zucchini; cook for an additional two minutes.
  5. In a bowl, combine cooked rice with chicken mixture, cherry tomatoes, olives, half of the feta cheese, and dill.
  6. Stuff the peppers with the filling and sprinkle remaining feta on top. Pour water into the baking dish.
  7. Cover with foil and bake for 40-45 minutes. Squeeze lemon juice over before serving.
