  • 1 tablespoon fresh oregano, chopped
  • Salt and pepper to taste
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • Juice and zest of 1 lemon
  • 2 tablespoons olive oil

Instructions

  1. In a large bowl, mix together ground chicken, breadcrumbs, Parmesan cheese, egg, garlic, parsley, oregano, salt, and pepper until just combined. Form into one-inch meatballs.
  2. Heat olive oil in a skillet over medium heat. Cook meatballs for 5-7 minutes on each side until golden brown and cooked through.
  3. Meanwhile, boil vegetable broth in another pot. Add orzo pasta and cook until al dente. Drain excess liquid and stir in lemon juice, zest, olive oil, salt, and pepper.
