  • 42g unsalted butter (cubed)
  • 5g fresh thyme (chopped)

Instructions

  1. Bring chicken broth and salt to a boil in a wide pot.
  2. Add cauliflower florets, reduce heat to low, cover, and steam for about 20 minutes until tender.
  3. Transfer the steamed cauliflower to a food processor.
  4. In the same pot, whisk cubed butter with about three tablespoons of hot broth until smooth.
  5. Pour the butter mixture over the cauliflower, add thyme and pepper, then blend until completely smooth. Adjust texture with more warm broth if needed.
