  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon ground cloves
  • 4 eggs
  • 2/3 cup water
  • 2 cups pumpkin puree
  • 2 cups sugar
  • 1 cup brown sugar
  • 1 cup oil
  • Optional: 1 cup gluten-free chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and grease your loaf pans.
  2. In a large bowl, mix together the gluten-free flour, baking soda, salt, cinnamon, nutmeg, and ground cloves.
  3. In another bowl, whisk the eggs, water, pumpkin puree, sugar, brown sugar, and oil until smooth.
  4. Combine wet and dry ingredients until just mixed; don’t overmix.
  5. Pour batter into greased loaf pans and bake for about one hour or until a toothpick comes out clean.
  6. Let cool in pans for 10 minutes before transferring to wire racks.
