  • 1 large bulb of garlic
  • 1.3 kg / 2.8 lb baking potatoes
  • 5 tbsp / 75g butter (2 tbsp melted)
  • 2 tbsp heavy cream
  • 60g / 3/4 cup grated Parmesan
  • 4 large egg yolks
  • Olive oil (as needed)
  • Salt & pepper (to taste)

Instructions

  1. Preheat the oven to 180C/356F. Roast the garlic by slicing the top off the bulb, drizzling with olive oil, wrapping in foil, and baking for about 50-60 minutes.
  2. While the garlic roasts, peel and dice the baking potatoes, then boil them in salted water until fork-tender.
  3. Once drained, mash the potatoes with melted butter, cream, roasted garlic, and grated Parmesan until smooth. Season with salt and pepper; mix in egg yolks one at a time.
  4. Spoon the mixture into a piping bag and pipe swirls onto parchment-lined baking trays.
  5. Drizzle with melted butter and bake at 200C/400F for about 15-20 minutes until golden brown.
