  • 3 large yellow onions (thinly sliced)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lb pasta (such as rigatoni, penne, or shells)
  • 4 cloves garlic (minced)
  • 6 cups beef broth (low sodium)
  • 1/2 cup dry apple vinegar
  • 2 tbsp balsamic vinegar
  • 1 tsp dried thyme
  • 1/2 cup grated Gruyère cheese (plus more for topping)
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. In a large skillet or Dutch oven, heat olive oil and butter over medium heat. Add the sliced onions along with sugar, salt, and pepper. Cook them slowly for about 30–40 minutes until they are deeply caramelized.
  2. Once your onions are beautifully caramelized, add the minced garlic and cook for another minute until fragrant. Then pour in the beef broth and apple vinegar while stirring in balsamic vinegar and dried thyme. Let everything simmer for about 10–15 minutes.
  3. While your sauce simmers away, cook the pasta according to package directions until al dente. Don’t forget to reserve about one cup of pasta water before draining!
  4. Add your drained pasta right into the skillet with the French onion sauce. Toss everything together until well-coated. If it’s too thick, add a splash of reserved pasta water.
  5. Finally, stir in half a cup of grated Gruyère cheese until it melts. Serve immediately while warm, topped with extra cheese and fresh parsley.
