  • 2 cups sharp cheddar cheese (shredded)
  • 1 ½ cups sour cream
  • ¼ cup unsalted butter (melted)
  • 2 small yellow onions (diced and thinly sliced)
  • 2 teaspoons garlic (minced)
  • ¼ cup all-purpose flour
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper
  • ½ teaspoon dried mustard
  • ½ cup chicken broth (room temperature)
  • ½ cup whole milk (room temperature)
  • 2 large yellow onions (thinly sliced, layers separated, about 4 cups onions)
  • 4 cups vegetable oil
  • ½ teaspoon kosher salt

Instructions

  1. Preheat your oven to 350°F.
  2. Spray a 9×13-inch baking dish with nonstick spray.
  3. In a skillet, melt ¼ cup of butter over medium heat and sauté diced onion and garlic until translucent (about 5 minutes).
  4. In a large bowl, mix thawed hash browns, sautéed onions, cheese, sour cream, flour, chicken broth, milk, salt, pepper, cayenne pepper, and dried mustard until combined.
  5. Pour the mixture into the prepared baking dish.
  6. In another skillet, heat vegetable oil and fry thinly sliced onions until golden brown.
  7. Bake covered for about 50 minutes; uncover for the last 10 minutes to crisp the topping.
  8. Let cool slightly before serving.
