  • 6 cups Chicken Broth (or vegetable broth)
  • 1 cup Kimchi (chopped)
  • 2 tbsp Gochujang (Korean chili paste, adjust to taste)
  • 1 tbsp Soy Sauce
  • 1 tsp Sesame Oil
  • 1 package Firm Tofu (drained and cubed)
  • 4 oz Shiitake Mushrooms (sliced)
  • 2 Green Onions (sliced for garnish)

Instructions

  1. Prepare the Dumplings: Mix ground beef, chopped kimchi, green onions, soy sauce, sesame oil, grated ginger, and black pepper in a bowl. Form small dumplings.
  2. Make the Broth: In a pot over medium heat, combine chicken broth, chopped kimchi, and gochujang. Bring to a simmer.
  3. Cook the Dumplings: Gently add dumplings to the simmering broth and cook until they float (about 10-12 minutes).
  4. Add Tofu and Mushrooms: Stir in cubed tofu and sliced shiitake mushrooms; simmer for an additional 5 minutes.
