  • 2 tablespoons extra virgin olive oil
  • 1 medium onion (finely diced)
  • 3 cloves garlic (minced)
  • 1/3 cup tomato paste
  • 1 cup low-sodium chicken stock
  • 1 (15-ounce) can diced tomatoes
  • 1 tablespoon sugar
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1/3 cup heavy cream

Instructions

  1. Heat olive oil in a medium pot over medium-high heat. Add finely diced onion and minced garlic; sauté until soft and translucent (about 4-5 minutes).
  2. Stir in tomato paste and cook for an additional minute to deepen the flavor.
  3. Pour in chicken stock and diced tomatoes; add sugar, Italian seasoning, salt, and black pepper. Bring to a boil, then reduce heat to simmer for 15-20 minutes.
