  • 5 ½ oz white chocolate
  • ¼ cup double cream
  • 3 ½ oz unsalted ground pistachios
  • ¾ cup all-purpose flour
  • ⅔ cup cornstarch
  • 1 tsp sugar
  • ½ tsp salt
  • 1 tbsp vegetable oil
  • 1 cup water
  • 3 ½ oz kataifi pastry
  • 1 tbsp butter
  • 9 oz milk chocolate

Instructions

  1. Prepare the kataifi pastry by whisking together flour, cornstarch, sugar, and salt. Add vegetable oil and water, mix until smooth, then let rest for 30 minutes.
  2. Cook the kataifi strands in a nonstick pan until just set and pale; cool completely on a towel.
  3. Make the pistachio cream by melting white chocolate with double cream; blend with ground pistachios until smooth.
  4. Toast the kataifi in butter until golden brown; combine with the pistachio cream mixture and chill for an hour.
  5. Roll chilled mixture into balls, dip in melted milk chocolate, and let set on parchment paper.
