  • 2 lbs mixed wild mushrooms (shiitake, oyster, cremini, cleaned and sliced)
  • 2 tbsp extra virgin olive oil
  • 1 large yellow onion (diced)
  • 4 cloves garlic (minced)
  • 1 tsp dried thyme
  • 1/2 tsp crushed dried rosemary
  • 6 cups vegetable broth (or chicken broth)
  • 1 cup heavy cream
  • 1/4 cup dry apple juice (optional)
  • to taste salt
  • to taste black pepper (freshly ground)
  • 2 tbsp fresh parsley (chopped, for garnish)

Instructions

  1. In a large pot over medium-high heat, warm the olive oil and sauté the sliced mushrooms until golden brown.
  2. Add diced onion and cook for about five minutes until softened. Stir in minced garlic, thyme, and rosemary.
  3. Pour in the vegetable broth and bring to a gentle simmer; cover and cook for about 20 minutes.
  4. Remove from heat and blend until smooth using an immersion blender or regular blender.
  5. Return to low heat, stir in heavy cream and optional apple juice; season with salt and pepper to taste.
  6. Serve warm, garnished with fresh parsley.
