  • 1 medium Yellow onion (chopped)
  • 2 stalks Celery (chopped)
  • 2 cloves Garlic (minced)
  • 6 cups Chicken broth
  • 4 cups Corn kernels (fresh or frozen)
  • 1/2 cup Heavy cream
  • 1 lb Shrimp (peeled and deveined)
  • 1 tbsp Butter
  • 1 tsp Old Bay seasoning
  • 1/2 tsp Salt (or to taste)
  • 1/4 tsp Black pepper (or to taste)
  • 1/4 tsp Paprika
  • 1/4 tsp Garlic powder
  • 1 tbsp Chopped fresh parsley (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion and celery until softened (5-7 minutes).
  2. Add minced garlic and cook until fragrant (1 minute).
  3. Pour in chicken broth and corn; bring to a boil, then simmer for 20 minutes.
  4. In a skillet, melt butter over medium heat. Add shrimp with paprika and garlic powder; cook until pink (2-3 minutes per side).
  5. Reserve 1 cup of soup; blend the remaining mixture until smooth.
  6. Stir in heavy cream, Old Bay seasoning, salt, and pepper into the blended soup.
  7. Fold in cooked shrimp and reserved chunky soup.
  8. Serve hot with chopped parsley garnish.
