  • 2 tablespoons unsalted butter
  • 2 cloves garlic (minced)
  • 1 tablespoon all-purpose flour
  • 1 cup heavy cream (or substitute whole milk)
  • 1/2 cup Parmesan cheese (optional)
  • 1 teaspoon fresh thyme
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the Yukon gold potatoes thinly (about 1/16th of an inch) using a mandolin or sharp knife.
  3. In a large pot over medium heat, melt the butter and sauté the minced garlic until fragrant. Stir in the flour to make a roux and cook for 1-2 minutes.
  4. Gradually whisk in the heavy cream until thickened (approximately five minutes), then add cheese, thyme, salt, and pepper.
  5. In a large bowl, toss the sliced potatoes with the creamy sauce until evenly coated.
  6. Arrange potato slices upright in a greased baking dish; pour any remaining sauce over them.
  7. Cover with foil and bake for 30 minutes, then remove foil and bake uncovered for another 30 minutes until bubbly and golden brown.
  8. Allow to cool for about 10 minutes before serving.
