  • 2 tbsp Olive Oil
  • 4 cloves Garlic (minced)
  • 1/2 tsp Red Pepper Flakes (optional)
  • 1/2 cup Vegetable Broth
  • 1/2 cup Heavy Cream
  • 1/4 cup Grated Parmesan Cheese
  • 2 tbsp Fresh Basil (chopped)
  • Salt and Black Pepper to taste

Instructions

  1. Preheat air fryer to 400°F (200°C) and roast red peppers cut-side down until blackened.
  2. Cool the peppers slightly, then peel off the skins.
  3. Cook pasta according to package directions; reserve one cup of pasta water before draining.
  4. Blend peeled peppers with vegetable broth until smooth.
  5. In a skillet, heat olive oil and sauté garlic with red pepper flakes until fragrant.
  6. Add the roasted pepper puree, simmer for five minutes.
  7. Stir in heavy cream and Parmesan cheese; season with salt and pepper, then let it thicken.
  8. Toss cooked pasta into the sauce, adding reserved pasta water as needed for desired consistency.
