  • 3 tablespoons butter
  • 1/2 yellow onion, diced
  • pinch of red pepper flakes (optional)
  • 3 garlic cloves, minced
  • 1 cup pumpkin puree
  • 1 1/2 cups heavy whipping cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground sage
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon brown sugar
  • 1/2 cup parmesan cheese (freshly grated, plus extra for serving)

Instructions

  1. Cook the rigatoni according to package instructions until al dente.
  2. In a skillet over medium heat, melt butter and sauté diced onion and optional red pepper flakes for 5-7 minutes until translucent.
  3. Add minced garlic and cook for an additional minute.
  4. Stir in the pumpkin puree and let it sauté for one minute before adding heavy cream. Mix well and season with salt, black pepper, sage, nutmeg, and brown sugar. Simmer gently for 2-3 minutes.
  5. Drain the pasta and add it to the pumpkin sauce, tossing to coat evenly.
  6. Serve garnished with extra Parmesan cheese and cracked black pepper.
