  • 1 medium head of green cabbage, finely shredded
  • 2 medium apples (Honeycrisp or Fuji), cored and diced
  • 1 cup dried cranberries
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/4 cup chopped fresh parsley
  • 1/2 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon celery seeds
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the cabbage by thinly slicing it and placing it in a large bowl.
  2. Core and dice the apples; add them along with dried cranberries to the cabbage.
  3. If using nuts, chop them coarsely and mix them in along with the parsley.
  4. In a separate bowl, whisk together mayonnaise, apple cider vinegar, honey (or maple syrup), Dijon mustard until smooth.
  5. Add celery seeds, salt, and pepper to the dressing; whisk again.
  6. Pour the dressing over the cabbage mixture; toss gently until everything is well coated.
  7. Cover and refrigerate for at least 30 minutes before serving to let flavors meld.
