  • 2 cloves Garlic (minced)
  • 1 tsp Italian Seasoning
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 2 tbsp Olive Oil
  • 1 large Onion (chopped)
  • 2 medium Carrots (chopped)
  • 2 stalks Celery (chopped)
  • 2 cloves Garlic (minced)
  • 8 cups Chicken Broth (low sodium)
  • 1 can Diced Tomatoes (14.5 oz, undrained)
  • 1 cup Pasta (small pasta such as ditalini or orzo)
  • 1/2 cup Fresh Parsley (chopped)
  • 1 tsp Dried Oregano
  • 1/2 tsp Salt (or to taste)
  • 1/4 tsp Black Pepper (or to taste)

Instructions

  1. Preheat the oven to 400°F (200°C). In a bowl, mix ground turkey, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper until just combined.
  2. Shape the mixture into 1-inch meatballs and place on a parchment-lined baking sheet. Bake for 15-20 minutes until cooked through.
  3. In a large pot, heat olive oil over medium heat. Sauté chopped onion, carrots, and celery until softened (about 5-7 minutes).
  4. Add minced garlic and cook for an additional minute. Pour in chicken broth and diced tomatoes; season with oregano, salt, and pepper. Bring to a boil then reduce heat to simmer for 15 minutes.
  5. Add the baked meatballs and pasta to the pot; continue cooking until the pasta is al dente (about 8-10 minutes).
  6. Stir in fresh parsley before serving hot.
