1 lb Ground Beef (80/20 blend)
1/2 lb Ground beef (or ground veal)
1/2 cup Breadcrumbs (plain)
1/4 cup Milk (whole milk)
1 large Egg (lightly beaten)
1 medium Onion (finely grated)
2 cloves Garlic (minced)
2 tsp Allspice (ground)
1 tsp Salt
1/2 tsp Black Pepper (freshly ground)
2 tbsp Olive Oil
1 medium Onion (chopped)
2 cloves Garlic (minced)
8 cups Beef Broth (low sodium)
1 lb Potatoes (peeled and cubed)
2 medium Carrots (peeled and sliced)
1 cup Heavy Cream
2 tbsp All-Purpose Flour
2 tbsp Fresh Dill (chopped, plus more for garnish)
1 tbsp Lemon Juice (freshly squeezed)
to taste Salt
to taste Black Pepper (freshly ground)
Instructions
In a large bowl, mix ground beef, breadcrumbs, milk, egg, grated onion, minced garlic, allspice, salt, and pepper until just combined. Form into 1-inch meatballs.
Heat olive oil in a large pot over medium heat and brown the meatballs on all sides. Remove and set aside.
