  • 1/2 lb Ground beef (or ground veal)
  • 1/2 cup Breadcrumbs (plain)
  • 1/4 cup Milk (whole milk)
  • 1 large Egg (lightly beaten)
  • 1 medium Onion (finely grated)
  • 2 cloves Garlic (minced)
  • 2 tsp Allspice (ground)
  • 1 tsp Salt
  • 1/2 tsp Black Pepper (freshly ground)
  • 2 tbsp Olive Oil
  • 1 medium Onion (chopped)
  • 2 cloves Garlic (minced)
  • 8 cups Beef Broth (low sodium)
  • 1 lb Potatoes (peeled and cubed)
  • 2 medium Carrots (peeled and sliced)
  • 1 cup Heavy Cream
  • 2 tbsp All-Purpose Flour
  • 2 tbsp Fresh Dill (chopped, plus more for garnish)
  • 1 tbsp Lemon Juice (freshly squeezed)
  • to taste Salt
  • to taste Black Pepper (freshly ground)

Instructions

  1. In a large bowl, mix ground beef, breadcrumbs, milk, egg, grated onion, minced garlic, allspice, salt, and pepper until just combined. Form into 1-inch meatballs.
  2. Heat olive oil in a large pot over medium heat and brown the meatballs on all sides. Remove and set aside.
  3. Sauté chopped onions and garlic in the same pot until translucent.
  4. Add beef broth, cubed potatoes, and sliced carrots; bring to a boil then simmer.
  5. Whisk together heavy cream and flour; stir into the soup to thicken.
  6. Return meatballs to the pot with fresh dill and lemon juice; simmer for 10 minutes.
  7. Adjust seasoning if necessary before serving.
