  • 15.5 oz black-eyed peas
  • 15 oz sweet corn
  • 1 cup fresh cilantro
  • ½ cup red bell pepper
  • ½ cup orange bell pepper
  • ½ cup red onion
  • 1 tsp chili powder
  • ½ tsp kosher salt
  • ¼ cup granulated sugar
  • ½ cup olive oil
  • ⅓ cup white apple vinegar
  • 1 tbsp fresh lime juice
  • ¼ tsp garlic powder

Instructions

  1. Drain and rinse the black beans, black-eyed peas, and corn; pat dry.
